Smuđa očistiti spolja i iznutra, preliti ga vrelom vodom, pa mu skinuti kožu. Zatim meso odvojiti od kostiju, iseći na komade, posoliti i pobiberiti i zaliti sokom od limuna. Glavu i kosti smuđa obariti u malo vode. Napraviti zapršku i zaliti je vodom u kojoj su se barili glava i kosti. Umak po ukusu posoliti, dodati biber, sok od limuna, 1 žumance i malu kašiku seckanog kaprija. Zdelu preliti buterom, na njega položiti sečene komade ribe, pa na svaki komad staviti pola sardele. Sve preliti umakom a odozgo posuti ribanim parmezanom. Posuti prezlama i tankim komadima butera. Peći u rerni 40 minuta.
